Cheese Danish Recipe
This cheese danish recipe layers flaky, buttery puff pastry with a smooth almond cream cheese filling and a ribbon of cranberry sauce. Finished with a light glaze and toasted almonds, it’s a refined take on a classic bakery pastry with balanced sweetness and texture.
Ingredients
- 1 puff pastry, ( I use Dufour)
- 1 large egg, (for egg wash)
- 1 tablespoon water, (for egg wash)
- 1/3 cup slivered almonds, (toasted)
- 2/3 cup cranberry sauce, (divided)
- 8 ounces cream cheese, (room temp)
- 1 large egg yolk
- 2/3 cup powdered sugar, (sifted)
- 1/2 + 1/8 teaspoon almond extract
- 1/2 teaspoon vanilla
- pinch kosher salt, (Diamond Crystal)
- 1 cup powdered sugar, (sifted)
- 1/2 teaspoon almond extract
- 2 tablespoons whole milk
- small pinch kosher salt
Instructions
- 1
Thaw puff pastry according to package instructions. Combine egg and water together to make an egg wash. Set aside.
- 2
Add cream cheese and egg yolk to a mixing bowl. Blend on high with a hand mixer until smooth. Add almond extract, powdered sugar, and salt. Carefully blend until fully mixed. Set aside. Preheat oven to 400°F.
- 3
Place puff pastry on a prepared baking sheet. Cut puff pastry in half lengthwise. Cut a ¾-inch border along the inside of each rectangle (this outer part will rise upon baking.) Transfer cream cheese mixture to piping bag, and pipe into the inner rectangle of each piece (as pictured). Gently even out the cream cheese mixture. Top with ⅓ cup of cranberry sauce on each piece, directly in the middle. Brush the outer border with the egg wash.
- 4
Transfer to the oven and bake for 14-17 minutes, or until lightly golden brown and cooked through. Tent with foil if browning too quickly. Meanwhile, make the glaze.
- 5
Add all ingredients to a mixing bowl and gently beat until the mixture comes together. Transfer glaze to a piping bag.
- 6
Remove baked cranberry-almond danish from the oven and leave on counter to fully cool. Top with desired amount of glaze and almonds. Enjoy.
