Fresh and delicious, with a hint of tangy zestiness, you’ll love this Instant Pot Couscous. It’s an easy but healthy side dish that pairs with pretty much everything!
📝 Ingredients
- 2 cups Israeli couscous (pearl couscous)
- 1 shallot (minced)
- 1 tablespoon olive oil
- 2 1/2 cups chicken stock (unsalted or low sodium)
- 1/4 teaspoon cinnamon
- 1 teaspoon lemon zest
- 2 teaspoons salt (reduce if using a salted chicken stock)
- 1/4 cup pine nuts (toasted)
- 1/2 cup raisins
- 1/2 cup chopped parsley
- 1 tablespoon fresh lemon juice (juice from 1 lemon)
👨🍳 Instructions
- 1Turn on the sauté function on the Instant Pot and add the olive oil.
- 2Add the couscous and shallot and sauté for 2-3 minutes (stirring occasionally), until the shallot is softened.
- 3Stir in the cinnamon, lemon zest, salt and broth.
- 4Turn the sauté function off and set the Instant Pot to pressure cook for 5 minutes on high.
- 5Use the quick release to release the pressure.
- 6Stir in the pine nuts, raisins, lemon juice and parsley and serve with extra lemons on the side.

- 8Heat a skillet over medium heat and add the pine nuts. Toast for 2-4 minutes, until a light golden brown. Be sure to toss them regularly to prevent burning.
