Potato Cheddar Soup with Italian Sausage (Soup Maker Recipe)
An oh-so comforting potato cheddar soup made in the soup maker, this recipe for potato cheddar soup blends lots of veggies with aromatic Italian sausage and cheddar for an unmistakable flavour. Try it on a cold day for lunch and your belly will thank you.
Ingredients
- 30 g butter
- 1 small onion
- 1 tsp minced garlic
- 1 tsp Italian herbs
- 1/2 tsp thyme
- 250 g potatoes
- 1 medium carrot
- 2 celery sticks
- 75 g mature cheddar
- 500 ml vegetable stock
- 50 ml double (heavy) cream
- 2 Italian sausages (cases removed)
- Salt and pepper

Cut all vegetables in large chunks and set aside.

Add the butter, onion, garlic and herbs to the soup maker and cook on "saute" or similar setting depending on your model for 5 minutes.

Add all the vegetables, cheddar, and stock, and use the "smooth" or "creamy" setting on your soup maker.

When there are 2-3 minutes left, add the double cream.

In the meantime, fry the Italian sausage in a small pan until golden and crisp.

When the soup maker is done, season with salt and pepper. Pour the soup into bowls and sprinkle the sausage on top.

Serve immediately with crusty bread or another side of choice.
