If you are a mojito fan, you’ll love this grilled pineapple mojito that is a perfect combination of smokey, minty, and fruity flavors. This cocktail will become your favorite summer drink in a jiffy.
📝 Ingredients
- 4-5 Grilled pineapple rings
- 1/2 Cup of water
- 1/2 Cup light brown sugar
- 2 oz Grilled pineapple syrup
- 1-2 Mint leaves
- 3-4 Grilled pineapple chunks
- 1 oz Fresh lime juice
- 4 oz dark rum
- 6-7 oz club soda, to top
- Garnish: grilled pineapple leaf/spike.
👨🍳 Instructions
- 1--- Grilled Pineapple Syrup: ---
- 2Grill the pineapple rings 3-5 minutes per side, until you get a good char.
- 3In a small saucepan at medium low heat, add water and brown sugar. Stir until all sugar is dissolved.
- 4In a bowl, muddle 4-5 grilled pineapple rings and add rings and juice to saucepan. Cook for about two more minutes.
- 5Remove from heat and let cool. Then strain the syrup and store in the refrigerator for up to a week.
- 6--- Grilled Pineapple Mojito: ---
- 7Muddle the lime juice, 2-3 grilled pineapple chunks and mint in a Collins glass.
- 8Add ice cubes. Pour in pineapple syrup, rum, and top with club soda.
- 9Garnish with pineapple leaf/spike.
