Cantuccini (Italian Almond Biscuits)
Cantuccini, or Tuscan almond biscuits, are those well-known Italian cookies that are baked twice for extra crispiness.
Ingredients
- 2 1/4 cups plain flour (sifted)
- 1 teaspoon baking powder
- 3/4 cup granulated sugar
- 2 large eggs
- 1/2 teaspoon lemon extract
- 1 tablespoon honey
- 1 cup raw almonds

Preheat the oven at 350 degrees F (180 degrees C). Line a baking tray with parchment paper.

Combine the flour, baking powder, and sugar in a large bowl.

Add the eggs, lemon extract, honey, and mix until you get a slightly crumbly mixture.

Add the almonds and mix again to incorporate them.

Transfer the dough to a floured surface and roll it into a long log approximately 20-inch long and 2-inches wide. You can do it in two logs if you want the cantuccini to be smaller.

Transfer the logs to the baking sheet.

Use a serrated knife to cut the logs into 1/2-inch slices.
