Strawberry Basil Cobbler

Strawberry Basil Cobbler is a quick, sweet dessert that’s delicious to eat at any occasion!
Ingredients
- 2 lb fresh or frozen strawberries, halved or quartered
- 2 tbsp granulated sugar
- 1 tbsp cornstarch
- 1 tbsp fresh basil, chopped
- 1 tbsp fresh lime juice
- 1 3/4 cup all-purpose flour
- 2 tbsp granulated sugar
- 1/4 tsp kosher salt
- 1 stick cold butter, cubed
- 1/2 cup buttermilk
- 1 large egg
- 1 tsp vanilla extract
- whipped cream, for garnish
Instructions
- 1
Preheat your oven to 350 degrees. Spray a 10-inch cast iron skillet with non-stick cooking spray.
- 2
In a large bowl, toss together 2 pounds strawberries, granulated sugar, cornstarch, fresh basil and fresh lime juice until the strawberries are evenly coated. Pour the mixture into the prepared skillet and spread into an even layer.
- 3
In a food processor, add the flour, sugar, and salt. Next, add in the cubed cold butter and pulse until pea sized. Add in the buttermilk, egg and vanilla extract. Pulse to combine into a shaggy, slightly wet dough.
- 4
Drop spoonfuls of the cobbler dough evenly over the strawberry filling, leaving some gaps so the fruit can bubble up through the topping.
- 5
Bake in the preheated oven until the topping is golden brown and the strawberry filling is bubbling around the edges.
- 6
Let the cobbler cool before serving, so the filling can set slightly. Serve warm, topped with whipped cream, for garnish.
