Ingredients

  • 1 lb silken or soft tofu ((see notes))
  • 2 tbsp hoisin sauce
  • 1 tbsp peanut butter (I used chunky peanut butter)
  • 2 tbsp lime juice (juice from 2 small limes)
  • 2-3 tsp sugar (adjust to desired sweetness)
  • 2 cloves garlic (minced)
  • 1 tbsp soy sauce (or to taste)
  • 1-2 tsp chili oil (optional for extra heat)
  • 1 tsp sesame oil
  • 1 tbsp water (to water down the sauce)
  • Fried shallots
  • Chopped green onions or cilantro
  • 1 serving wheat noodles of choice
  • 1-2 tsp soy sauce (optional to taste)
  • 1-2 tsp chili oil (optional for extra spice)

Instructions

  1. 1

    --- SILKEN TOFU ---

  2. 2

Prepare the silken tofu: remove the silken tofu from the packaging and drain any excess water. You can leave it to sit on a plate while you prepare the sauce since the tofu will continue to release more water that you can discard later on before pouring the sauce.

  3. 3

I like the tofu really cold so I place this in the refrigerator while I prepare the sauce.

  4. 4

    --- SAUCE ---

  5. 5

Prepare the sauce: mix everything together and feel free to adjust to your desired taste.

  6. 6

    --- NOODLES ---

  7. 7

Noodles: I like to cook a batch of noodles to mix with the sauce. I use wheat noodles and cook this until chewy to my liking.

  8. 8

    --- TO SERVE ---

  9. 9

Pour the sauce over the tofu.

  10. 10

Top with toppings of your choice - I used green onions and fried shallots.

  11. 11

For the extra sauce, I like using this with cooked noodles. I use wheat noodles that I cooked until chewy to my liking.

  12. 12

Place the freshly cooked noodles in a bowl and pour the leftover hoisin peanut lime sauce along with some soy sauce to taste, and chili oil, for extra spice. Mix well.

  13. 13

Enjoy your tofu and noodles! This is a great complete meal you can prepare in 20 minutes or less.
