Gluten-Free Oat Pancakes

If you're part of the pancake team, these are the perfect treat for any breakfast!

Ingredients

  • 2 Bananas
  • 2 cups Rolled oats (Be sure to take the Gluten-free ones if you're sensitive to gluten.)
  • 1 1/2 cup Plant-based milk (I used oat milk)
  • 4 Dates
  • 1 tsp Vanilla extract (For more flavor)
  • 1/2 tsp Baking powder
  • 1/2 tsp Baking soda
  • 1 tsp Cider vinegar

Instructions

    Roughly cut the bananas and dates in large bits.

    Add all the ingredients into the food processor (or blender).

  3. 3

    Blend until thick and lumpy. Don't blend too much otherwise it will be hard to cook them.

    Heat some oil in a large skillet/pan on medium heat and pour a small ladle of the batter into the pan. Let cook for about 2-3 minutes until little bubbles start to form on top, then flip and let cook for another minute or two.

    Serve with your favorite toppings!
