The Famous Sardine Sandwich from the Spain | Bocadillo de Sardinas

📝 Ingredients

  • 2 cans sardines in olive oil (4 oz / 120 grams each)
  • 1 large onion (thinly sliced)
  • 1 large green bell pepper (thinly sliced)
  • 4 cloves garlic (thinly sliced)
  • 1/2 cup mayonnaise (120 grams)
  • 1 tsp Dijon mustard (5 grams)
  • 2 cloves garlic (finely grated)
  • 1 tsp lemon juice (5 ml)
  • 1 tbsp extra virgin olive oil (15 ml)
  • 1 tomato (finely grated)
  • 1 baguette
  • sea salt & black pepper
  • chopped parsley for garnish

👨‍🍳 Instructions

  1. 1Gently drain the cans of sardines into a fine sieve with a bowl underneath
  2. 2Heat a large fry pan with a medium heat and add in the drained olive oil from the canned sardines
  3. 3After a couple of minutes, add in the sliced onion, sliced green bell pepper, and sliced garlic, mix together, then mix every 1 to 2 minutes so everything evenly sautés
  4. 4In the meantime, add the mayonnaise into a bowl, along with the Dijon mustard, grated garlic, lemon juice, and olive oil, then season with salt & pepper and whisk together
  5. 5After sautéing the vegetables for 7 to 8 minutes and they're lightly sautéed, season with salt & pepper, mix together, and then turn off the heat
  6. 6Cut the baguette into 3-inch (8 cm) pieces (this is about the typical length of a canned sardine), then cut each piece in half lengthwise
  7. 7Add a layer of the mayo aioli over the bottom and top slice of each sandwich, then add some of the grated tomato over the bottom slice, along with a generous portion of the sautéed vegetables and two sardines, top off with chopped parsley, enjoy!
