- 1 lb elbow macaroni pasta
- 2 tbsp oil, divided
- 1 yellow onion, diced (~1.5 cups)
- 1 large yukon gold potato, peeled and cut into 1/2" dice (~1 cup)
- 1 large carrot, peeled and cut into medium dice (~1/2 cup)
- 2 garlic cloves, smashed and peeled
- 1 cup raw cashews
- 1/2 tsp salt, more to taste
- 1 tsp smoked paprika
- 1/2 tsp turmeric
- 1/2 tsp white pepper
- 1 tbsp red miso
- 3 cups water or vegetable broth
- 6 tbsp nutritional yeast
- 12 slices vegan bacon, chopped
