📝 Ingredients
- 1/2 cup extra virgin olive oil (120 ml)
- 2 medium yellow onions
- 1 red bell pepper
- 1 green bell pepper
- 1 head garlic
- 4 large eggs
- sea salt & black pepper
- 2 cloves garlic
- 2 tbsp chopped parsley (5 grams)
- 2 tbsp extra virgin olive oil (30 ml)

👨🍳 Instructions
- 1Roughly chop the onions, cut the bell peppers into small bite-sized pieces, separate the cloves from the head of garlic, and cut a slit on each one (leaving the skins on)
- 2Heat a large fry pan with a medium heat and add in 1/4 cup (60 ml) olive oil
- 3After a couple of minutes, add in the chopped onions, bell peppers, and cloves of garlic, mix together, then mix every 2 to 3 minutes so everything evenly sautés
- 4After 12 to 15 minutes and the vegetables are lightly browned, season with salt & pepper, mix together, and then transfer the vegetables into a large serving dish
- 5Heat the same fry pan with a medium heat, and add in 1/4 cup (60 ml) olive oil
- 6After a couple of minutes, crack in the eggs, all in a single layer and evenly spaced out, and fry to your liking, I like a slightly crispy egg white with a creamy yolk, once fried, season with salt & pepper, and add the egg over the vegetables
- 7To make the garlic sauce, add the chopped garlic into a mortar, along with the chopped parsley and a pinch of salt, using a pestle, pound down on the ingredients until you get a paste-like texture, then add in olive oil and mix together
- 8Add the garlic sauce over the eggs and serve, enjoy!
