Aubergine and Halloumi Curry
Aubergine and halloumi curry is a simple yet delicious vegetarian curry that’s full of flavour and has an amazing texture. The rich and tasty curry sauce pairs perfectly with fried aubergine and halloumi for a quick and easy dish the entire family will enjoy.
Ingredients

- 2 medium aubergines (eggplant), cut into bite-size chunks
- 1 large onion, finely chopped
- 1 pointed red pepper, sliced
- 2 large garlic cloves, finely chopped
- 1-inch know fresh ginger, chopped
- 2 tablespoons medium curry powder
- 1 x 400 g (14 oz) can chopped tomatoes
- 200 ml (1 cup) water
- 200 ml (1 cup) coconut milk
- 225 g (8 oz) halloumi, cut into bite-sized pieces
- Fresh coriander, a handful
