Red pepper hummus is a flavourful twist to traditional hummus, made by blending roasted red peppers with chickpeas, tahini, lemon juice, garlic, olive oil, and other add-ins. It has a smoky, slightly sweet taste that’s delicious on its own, but it's also great on sandwiches or wraps. The caramelized bell pepper and garlic are muted in their intensity, and add a lovely richness to this hummus.
📝 Ingredients
- 2 red bell pepper
- 6 garlic clove
- 1 Tbsp olive oil
- 2 cup cooked chickpeas
- 3 Tbsp tahini
- 1 lemon
- 1 Tbsp olive oil
- 1 Tbsp cold water
- 2 tsp balsamic vinegar
- 1/2 tsp sweet paprika powder
- 1/2 tsp salt
👨🍳 Instructions
- 1Line a baking tray and preheat the oven to 450°F (250°C).
- 2Add the bell peppers and garlic to the tray. Toss with oil, and bake for 25 minutes, or until the bell peppers are lightly charred. Flip once halfway.
- 3Remove any charred skin and peel off the bell pepper and garlic. Transfer to a food processor and add all the remaining ingredients. Blend until smooth.
- 4For a creamier consistency, consider adding more olive oil, tahini, or lemon juice to taste. Plate, garnish, and serve!
