Curry Lentil Soup

Lentils and potatoes are always fantastic together and make this soup pure comfort. Plus it's a pretty low maintenance recipe - any combination of veggies can go into it and it'll turn out great.
Ingredients
- 2 tsp olive oil
- 1 medium onion
- 2 garlic clove
- 1 tsp curry powder
- 1 tsp sweet paprika powder
- 1/2 tsp ground coriander
- 1/2 tsp garam masala
- 1/4 tsp ground turmeric
- 3 medium potato
- 1 medium zucchini
- 1 medium carrot
- 1 cup dry red lentils
- 2 vegetable bouillon cube
- 4 cup water
- 1/2 lemon
- 1 1/2 cup unsweetened soy yogurt
- 3 vegan naan
Instructions
- 1
Heat the oil in a large pot over high heat. Cook the onion until golden, about 5 minutes. Add splashes of water as needed to deglaze the pan.
- 2
Then add garlic and the spices, and cook for another 2 minutes.
- 3
Add the remaining soup ingredients. Simmer, partially covered, for 15 minutes or until the lentils and potatoes are cooked.
- 4
Optionally, for a creamier texture, use an immersion blender to purée some of the soup. Then add the lemon juice.
- 5
Garnish as desired, serve hot and enjoy!
