This bright pea soup recipe is great in both warmer or colder months. Try it cold, like a gazpacho in the summer, or have it simmering away on the stove during winter. It's also an incredible source of protein, from both the green peas and edamame.
📝 Ingredients
- 2 tsp vegetable oil
- 2 garlic clove
- 1 small onion
- 1 tsp dried thyme
- 2 cup frozen green peas
- 1 cup frozen shelled edamame
- 4 cup vegetable broth
- 1/2 cup raw cashews
- 1 pinch salt
- 1 pinch ground black pepper
👨🍳 Instructions
- 1Heat the oil in a large pot over medium-high heat, then add the onions and garlic and sauté until lightly golden, about 5 minutes. Add splashes of water as needed to deglaze the pot.
- 2Add the remaining ingredients, bring to a boil, reduce to a simmer, and partially cover with a lid. Let simmer for 15 minutes.
- 3Remove the pot from the heat and use an immersion blender or standing blender to blend the soup until creamy.
- 4Serve while hot, and top with crunchy croutons - enjoy!
