Simple Oatmeal Pancakes

My two go-to breakfast favourites in one recipe: oatmeal and pancakes. These gluten-free oatmeal pancakes are quick to whip up and freeze super well, making them perfect for meal prepping and enjoying on the weekend. These easy pancakes with oats are also well-loved throughout the week for a wholesome and satisfying start to the day!
Ingredients
- 2 cup rolled oats
- 1 cup unsweetened soy milk
- 1/3 cup unsweetened applesauce
- 2 Tbsp maple syrup
- 1 Tbsp refined coconut oil
- 2 tsp ground cinnamon
- 1 tsp baking powder
- 1 tsp pure vanilla extract
- 1/2 tsp salt
- 1/2 cup unsweetened coconut yogurt
- 1/4 cup pomegranate seeds
- 2 Tbsp unsalted roasted pistachios
Instructions

In a food processor, blend the oatmeal into a flour. Alternatively, use store-bought oatmeal flour.

Combine all the pancake ingredients in a large bowl.

Preheat a large pan over medium-high heat with oil. When hot, spoon about ¼ cup of batter onto the pan for each pancake. Cook for about 2 minutes.

When the bottom becomes golden, flip and cook for another 2 minutes, or until lightly golden.

For a more balanced breakfast, enjoy these pancakes with some creamy nut butter drizzled overtop, fresh fruit, and creamy plant-based yogurt.
