Keto Mug Brownie

A fudgy keto mug brownie with coconut flour, dairy-free gluten-free for a quick keto mug cake to fix your chocolate craving on a keto diet.
Ingredients
- 1 large Egg (at room temperature)
- 1 tablespoon Salted Butter (melted)
- 1/2 teaspoon Vanilla Extract
- 2 tablespoons Unsweetened Cocoa Powder
- 2 teaspoons Coconut Flour (or 3 tablespoons of almond flour)
- 2 tablespoons Granulated Sweetener
- 1/4 teaspoon Baking Powder
- 2 teaspoons Sugar-Free Chocolate Chips (+ more to sprinkle on top)

In a small bowl, beat the egg, melted butter, and vanilla extract.

Whisk in unsweetened cocoa powder, coconut flour, erythritol, and baking powder.

The batter should be smooth and shiny. Now stir in sugar-free chocolate chips and transfer them to a tall coffee mug - volume 8-12 fl oz - or into a microwave-safe ramekin.

Microwave on high power (900W) for 60 seconds for a fudgy brownie or 70-80 seconds for a cake more like texture. You can start with 60 seconds, check, and keep baking in the microwave by 20-second bursts until it reaches your favorite texture.

Cool down for 1-2 minutes before eating. This will allow the brownie to cool down a bit and the texture to be perfectly fudgy. Optional: sprinkle extra chocolate chips on top as it cools down.
