This Zucchini Pie is one of my favorite summer recipes, with tender slices of zucchini baked with onions, fresh herbs, white cheddar, and fresh Parmesan cheese.

📝 Ingredients

  • 1 cup Bisquick baking mix
  • 4 large eggs
  • 1/2 cup unsalted butter, melted and slightly cooled
  • 2 teaspoons chopped fresh rosemary
  • 2 teaspoons chopped fresh parsley
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 2/3 cup shredded white cheddar
  • 2/3 cup grated Parmesan
  • 3 cups thinly sliced zucchini
  • 1/2 cup finely chopped yellow onion

👨‍🍳 Instructions

  1. 1Preheat oven to 350°F. Grease a deep-dish 9-inch pie pan.
  2. 2Stir the baking mix, eggs, melted butter, rosemary, parsley, salt, and pepper in a large bowl.
  3. 3Stir in the cheddar and Parmesan cheese. Fold in the sliced zucchini and onions.
  4. 4Spoon the mixture into the prepared pie pan. Bake for 40-45 minutes or until set, golden brown, and puffed up.
