Smoked stuffed peppers, packed with a creamy Boursin cheese filling, grilled and ready to eat in 30 minutes.

📝 Ingredients

  • 16 oz Sweet Mini Peppers
  • 5.2 oz Boursin cheese (I used shallot & chive )
  • 1 clove garlic (minced)
  • 1 tbsp All-purpose BBQ rub (I used Blazing Star BBQ - All in One)
  • 1 tsp Kosher salt
  • 1 tsp black pepper (coursely ground)

👨‍🍳 Instructions

  1. 1Preheat your grill or smoker to 300°F.
  2. 2Start by chopping the tops & stems off your peppers.
  3. 3Using a butter knife or small spoon, scoop out the seeds and stems from the inside of the peppers to hollow them out.
  4. 4In a small bowl, combine the Boursin cheese, minced garlic, all-purpose BBQ rub, salt, and pepper. Mix until well-combined.
  5. 5Fill each pepper with the cheese mixture.
  6. 6Place the stuffed peppers on a baking sheet and place them on the grates of your grill. Cook for 30 minutes, or until the peppers just start to soften.
  7. 7Serve them by themselves or alongside your favorite smoked sausage and enjoy!
