Aloo Matar

Aloo Matar, or Aloo Muttur, is a dish originating from northern India, which consists of potatoes (aloo) and peas (matar) in a spiced creamy tomato sauce. It's a very filling and budget-friendly meal, and very enjoyable throughout the whole year. We often order the dish from our favourite Indian restaurants, but wonderfully speedy to make it yourself at home too!

Ingredients

  • 2 tsp vegetable oil
  • 1 tsp coriander seeds
  • 1/2 tsp cumin seeds
  • 1 large onion
  • 4 garlic clove
  • 2 tsp grated fresh ginger
  • 1 tsp salt
  • 1 tsp garam masala
  • 1/2 tsp ground turmeric
  • 1/2 tsp cayenne pepper
  • 1/4 tsp ground black pepper
  • 3 medium potato
  • 1 1/2 cup canned diced tomatoes
  • 1 cup boiling water
  • 1/2 vegetable bouillon cube
  • 1 cup frozen green peas
  • 1/2 cup coconut cream
  • 2 vegan naan

Instructions

    Heat the oil in a large pot over medium-high heat. Toast the coriander and cumin seeds for 1 to 2 minutes, stirring throughout.

    Then add the onion, garlic, and ginger. Cook for 3 minutes, stirring often.

    Then add the salt, garam masala, turmeric, cayenne, and pepper. Toast for 30 - 60 seconds, stirring throughout.

    Add the potatoes to the pot. Cook for 3 to 4 minutes, stirring frequently.

    Pour in the tomatoes, water, and bouillon. Cover, bring to a boil, then reduce to a simmer, cooking for 15 minutes. Then remove the lid and cook uncovered for another 15 minutes, or until the potatoes are cooked through.

    Add the peas and coconut cream and let heat through.

    Serve with rice or naan, and enjoy!
