📝 Ingredients
- 1 whole (3 1/2–4-pounds) chicken
- 1/4 cup apple cider vinegar
- 1/4 cup soy sauce
- 6 garlic cloves, smashed
- 1 teaspoon black pepper
- 4 bay leaves
- 1/4 cup soy sauce
- 1/4 cup apple cider vinegar
- 1 tablespoon granulated sugar
- 1 cup chicken broth
- 2 tablespoons neutral oil
- 1 large onion, sliced
- 1 bell pepper, sliced
- 4 cups cooked white rice, for serving
👨🍳 Instructions
- 1Cut the chicken into pieces using scissors or a sharp, heavy chef’s knife.
- 2Combine the chicken pieces with apple cider vinegar, soy sauce, smashed garlic, black pepper, and bay leaves in a large bowl. Toss to coat. Cover and marinate in the fridge for at least 1 hour or up to overnight.
- 3Whisk together the soy sauce, apple cider vinegar, sugar, and chicken broth in a small bowl. Set aside.
- 4Heat the oil in a large heavy-bottomed skillet or wok over medium-high heat.
- 5Remove the chicken from the marinade and pat it dry. Reserve the marinade.
- 6Add the chicken pieces skin-side down and sear for 4–5 minutes per side until golden brown. Work in batches if needed.
- 7Remove the chicken and set it aside.
- 8Add the onion and bell pepper to the same pan and cook for 3–4 minutes, until softened.
- 9Pour in the adobo sauce and reserved marinade.
- 10Return the chicken to the pan. Bring to a boil, then reduce the heat to medium-low.
- 11Cover and cook for 25–30 minutes, turning the chicken occasionally, until it’s cooked through and the sauce has reduced.
- 12Remove the bay leaves. Taste and adjust the seasoning.
- 13Serve the Filipino chicken stir-fry over white rice.
