Ingredients

  • 1/3 cup olive oil (extra virgin )
  • 1 Tablespoon lemon zest plus 1/4 cup lemon juice (plus more to taste)
  • 2 cloves garlic (minced or grated)
  • 1/2 teaspoon salt (plus more to taste)
  • Pinch of sugar (plus more to taste)
  • 1-2 teaspoons za'atar (or sumac, optional)
  • 16 ounces cabbage (shredded, 1/2 of a large green cabbage)
  • 1/2 cup tomatoes (diced )
  • 3-4 radishes (thinly sliced)
  • 3 green onions (sliced)
  • 1/2 cup flat leaf parsley (chopped)
  • 1/4 cup fresh mint (chopped)
  • 1/4 cup fresh dill (chopped)

Instructions

    In a large bowl, whisk together the ⅓ cup olive oil, 1 Tablespoon lemon zest plus ¼ cup lemon juice, 2 cloves garlic, 1/2 teaspoon salt, Pinch of sugar and 1-2 teaspoons za'atar.

    Add the 16 ounces cabbage, ½ cup tomatoes, 3-4 radishes, 3 green onions, ½ cup flat leaf parsley, 1/4 cup fresh mint and 1/4 cup fresh dill and toss gently to combine.

    Season with additional lemon juice, salt, sugar and/or za'atar or sumac, to taste.

    Serve immediately, or cover and refrigerate for up to 4 hours.
