Grilled Chicken Caesar Pizza

Grilled Chicken Caesar Pizza is as fun as it is delicious. I took a shortcut, using grilled naan for the crust, topped it with cheese until melted, slices of grilled chicken, romaine that I tossed with a little of my homemade caesar dressing, Parmesan shavings and a sprinkle of black pepper. Whether you make it for lunch or on busy weeknights, it's sure to be a hit.

Ingredients

  • 4 boneless skinless chicken breasts halves
  • 2 tablespoons caesar dressing
  • lemon pepper (to taste)
  • 4 naan (homemade or store bought)
  • olive oil
  • 1 cup mozzarella cheese (freshly grated (be generous))
  • 1/4 cup grated Parmesan cheese
  • 2 medium romaine lettuce (sliced)
  • caesar dressing (for serving)
  • parmesan cheese shavings or grated (for serving)
  • black pepper (for serving)

Instructions

    Preheat your grill to 400℉ (or 200℃).

    Toss the chicken with a few tablespoons of caesar dressing and sprinkle both sides of each breast with lemon pepper.

    Place the chicken breasts onto the hot grill grates and grill for 6 minutes on the first side. Turn and continue to grill for 4 to 5 more minutes or until the chicken is fully cooked and no longer pink. Transfer to a cutting board, cover with foil and let rest for 5 minutes before slicing.

    Meanwhile, reduce the heat of your grill to 350℉ (or 180℃).

    Brush both sides of the naan with olive oil. Grill for 1 to 2 minutes, turn and top each with 1/4 cup of mozzarella and sprinkle with a tablespoon of Parmesan. Close the lid for 1 minute or until cheese is melted.

    Top with slices of grilled chicken. Quickly toss the sliced romaine with a few spoonfuls of dressing and divide it among the pizzas. Top with shavings of Parmesan (or more grated), season with black pepper and drizzle on more dressing if desired.
