📝 Ingredients

  • 1 medium fresh tomatoes
  • 2 medium jalapeno pepper (deseeded)
  • 1/4 medium onion
  • 4 ounce bacon
  • 1 1/2 ounce pork rinds
  • salt and pepper (to taste)
  • 1/4 cup fresh cilantro (chopped)
  • 5 large egg
  • 1 medium avocado

👨‍🍳 Instructions

  1. 1Finely dice the tomatoes, jalapeño, and onion.
  2. 2Start by frying the slices of bacon in a pan. Once done, remove and place them on paper towels for later. Try and keep as much of the bacon grease in the pan as possible.
  3. 3Fry the pork rinds in the bacon fat, ensuring that they're coated properly.
  4. 4Once the pork rinds are nice and crispy, add the chopped vegetables to the pan. Mix everything and season as needed.
  5. 5Once the onions are almost translucent, add the chopped cilantro to the pan. Mix everything.
  6. 6Whisk the eggs in a separate bowl, add them to the pan, then mix everything. Season as needed.
  7. 7Let this cook like an omelet. When ready, mix once to let the uncooked egg get to the bottom of the pan.
