Chocolate Coconut Bread

Ingredients
- 140 g flour
- 100 g shredded coconut
- 100 g coconut sugar—if you can not get it, you can substitute with brown sugar
- 100 ml sunflower oil
- 100 g plain yoghurt
- 4 eggs
- 1 pinch sea salt
- 2 Tsp baking soda
- 1 handful chocolate chips or if you dare 2 handful
- optional : confectioners sugar to dust
Instructions

Preheat the oven to 160 °C and line a baking tin with baking paper.

Beat oil, coconut sugar and eggs for 1 minute using an electric whisker.

Add the flour, baking soda, shredded coconut, yoghurt, and salt.

Mix for another minute, then add the chocolate chips and fold them underneath.

Pour the dough in the baking loaf (add some more chocolates if you dare) and bake for 50 mins.

Let the cake cool down in the baking loaf and then remove it and place on a cooling rack.

Dust with some confectioners sugar if you like
