📝 Ingredients

  • 2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon ancho chile powder
  • 1 teaspoon liquid smoke
  • 1 teaspoon worcestershire sauce
  • 40 ounce bone-in skin-on turkey legs
  • 2 tablespoon lard (or oil with a high smoke point, such as peanut oil)

👨‍🍳 Instructions

  1. 1Mix together all dry spices in a small bowl. Then, add wet ingredients and mix together into a rub.
  2. 2Pat turkey legs completely dry with paper towels and season generously with the spice mix.
  3. 3Preheat oven to 350F. Bring the lard (or oil) to a medium-high heat in a cast-iron skillet. Once the oil starts to smoke, add the turkey legs to the pan and sear on each side for 1–2 minutes — you want the entire leg to have a sear on it.
  4. 4Place in the oven for 50–60 minutes or until cooked through.
  5. 5Remove the turkey from the oven and let rest for a few minutes.
  6. 6Serve with a favorite fatty side dish and enjoy the holiday meal!
