These crispy baked plantain chips are made with green plantains, coconut oil and sea salt. They’re a simple and healthy snack that’s perfect for dipping in an easy homemade salsa or enjoying on their own.
📝 Ingredients
- 2 green plantains (sliced thin on the diagonal)
- 2 tablespoons coconut oil (melted)
- kosher salt
- 1/2 green bell pepper (diced)
- 1/2 red bell pepper (diced)
- 1 small jalapeño pepper (diced)
- 1 kiwi (diced)
- 1/2 avocado (chopped)
- 1 tablespoon cilantro (minced)
- 1/2 tablespoon mint (minced)
- juice of 1/2 a lime
👨🍳 Instructions
- 1Preheat oven to 350°F.
- 2Toss plantain slices with melted coconut oil and lay flat on a baking sheet.
- 3Season with a generous amount of kosher salt.
- 4Bake for 15 minutes, flip and bake for another 5-7 minutes. Plantains should be golden brown.
- 5Let cool on baking sheet to crisp up.
- 6Meanwhile, combine the remaining ingredients in a bowl and toss together to make the salsa.
