Easy Cucumber, Tomato and Feta Salad

If you love Greek salad but don't always have olives and peppers in the fridge, this simpler cucumber, tomato and feta salad is for you. It's just as fresh, colorful and delicious, but a little faster and easier to make. It's hard to think of anything this doesn't go with - grilled chicken or fish, quiche, pasta, and more. Serve it at your next BBQ - it's perfect!
Ingredients
- 2 1/4 cups cherry tomatoes (halved (I like the multi-colored ones if available))
- 1 medium English cucumber (sliced then halved or quartered so they are a similar size to the halved tomatoes)
- 1/4 medium red onion (finely chopped)
- 1/3 cup feta cheese ((1/3 cup is roughly 2 ounces - you can increase the amount if you like))
- 1 teaspoon dried oregano
- 2 tablespoons fresh mint (chopped)
- 1/4 cup fresh basil ((optional - for extra flavor and freshness))
- 1/4 cup extra virgin olive oil
- 1 1/2 tablespoons vinegar (or lemon juice)

Put all ingredients apart from dressing ingredients in a large salad bowl.: Put all of the ingredients apart from the olive oil and vinegar in a large salad bowl.

Whisk the dressing toether.: In a small jug or bowl, whisk the olive oil and vinegar together.

Toss through the dressing.: Pour the dressing all over the salad and toss well to serve.
