This roasted sweet potato apple ham sandwich is served hot and pressed with a generous amount of melted cheddar cheese and a honey mustard spread.
📝 Ingredients
- 1/2 medium sweet potato (sliced into rounds about 1/4" thick)
- 1 tablespoon olive oil
- 1/2 teaspoon dried rosemary
- salt & pepper
- 1/2 small red onion (sliced)
- 1 tablespoon olive oil
- pinch of salt
- 2 slices hearty bread of any kind
- 1 tablespoon melted butter
- 2 tablespoons honey mustard
- roasted sweet potatoes
- 6 slices cheddar
- 1 large tuscan kale leaf (torn into pieces)
- 1/4 large green apple (sliced)
- caramelized red onions
- 2 ounces about 4 slices leftover ham (or deli sliced ham)
👨🍳 Instructions
- 1--- For roasted sweet potatoes ---
- 2Preheat oven to 425 degrees.
- 3Place sweet potato rounds on greased or silicone mat lined baking sheet. Drizzle with olive oil and season with rosemary, salt and pepper.
- 4Roast for about 20-25 minutes, flipping half way through until softened and golden brown around the edges.
- 5--- For caramelized red onions ---
- 6Place olive oil in a small sauce pot over medium heat.
- 7Add onions and salt, reduce heat to medium-low and cook, stirring often until softened and starting to turn golden brown. Remove from heat and set aside.
- 8--- For the sandwich ---
- 9Brush one side of both pieces of bread with the melted butter.
- 10Turn the bread slices over and spread the honey mustard on each piece.
- 11Place the cheddar on top of the honey mustard spread on one piece of bread and continue layering in this order: sweet potatoes, kale, apple slices, red onions and ham. Place the other piece of bread on top with the buttered side up.
- 12Place the sandwich in a pre-heated skillet and press down firmly with a large spatula to help melt the cheese.
- 13Flip after 2-3 minutes once bread is golden and crispy on the bottom and repeat on the other side.
- 14Cut the sandwich in half and serve warm.
