- 2 cups elbow macaroni
- cucumber (sliced in rounds)
- large tomato (chopped)
- yellow red pepper (seeded and chopped)
- 1/2 cup matchstick carrots
- 1/4 cup diced red onion
- 1 1/2 cups real mayonnaise
- salt and pepper
👨🍳 Instructions
- 1Cook macaroni according to package directions.
- 2Drain and rinse with cold water to cool. Make sure to drain as much water as possible from noodles before moving onto next step. Noodles can also be made a day ahead and rinsed with cold water to loosen day of.
- 3In a mixing bowl, add sliced cucumbers, large chopped tomatoes, pieces of yellow and red pepper, diced red onions and shredded carrots.
- 4Mix all ingredients together well.
- 5Add mayonnaise.
- 6Season with salt and pepper.
- 7Fold in cooked macaroni pasta shells and mix.
