Lemon Dill Sauce

Ingredients
- 3/4 cup dry white wine (or dry vermouth)
- 3 Tablespoons shallot (minced)
- 2 Tablespoons lemon juice (fresh squeezed)
- 1/2 cup butter (unsalted, cut into 6 pieces)
- 1 1/2 Tablespoons fresh dill (chopped)
- Salt and pepper (to taste)

Boil ¾ cup dry white wine, 3 Tablespoons shallot and 2 Tablespoons lemon juice in a small saucepan over high heat until reduced to ¼ cup, about 6 minutes.

Reduce heat to low and add ½ cup butter, one piece at a time, whisking until melted before adding more.

Remove pan from heat. Stir in 1 ½ Tablespoons fresh dill.
