Taco night will never be the same after soaking your meat or veggies in this flavor-packed Al Pastor Marinade. It’s surprisingly easy to make and loads every bite with addictive layers of smoky, earthy, and citrusy goodness!
📝 Ingredients
- 2 pounds meat of choice
- 3 cloves garlic
- 2-3 chipotle peppers (from a can packed in adobo sauce)
- 3/4 cup fresh pineapple (chopped )
- 1/2 cup fresh orange juice
- 3 Tablespoons apple cider vinegar
- 1 Tablespoon honey (or maple syrup)
- 1 Tablespoon achiote paste
- 1 Tablespoon ancho chili powder
- 1 teaspoon dried oregano
- 1 teaspoon ground cumin
- 2 teaspoons kosher salt
- Salt and pepper (to taste)
👨🍳 Instructions
- 1Add 3 cloves garlic, 2-3 chipotle peppers, ¾ cup fresh pineapple, 1/2 cup fresh orange juice, 3 Tablespoons apple cider vinegar, 1 Tablespoon honey, 1 Tablespoon achiote paste, 1 Tablespoon ancho chili powder, 1 teaspoon dried oregano, 1 teaspoon ground cumin, and 2 teaspoons kosher salt to a blender. Season with black pepper, as desired. Blend until combined; the marinade should be thick & smooth. Use immediately, or transfer to a jar or airtight container and store in the refrigerator for up to 1 week.
