Aloo methi sabji without tomato, a super easy recipe with spices powders to balance the taste.

📝 Ingredients

  • 3 Potato
  • 1 Onion
  • 1 cup Methi leaves (without stem, tightly packed)
  • 1 tsp Kashmiri chilli powder
  • 1/2 tsp Coriander powder
  • 1/4 tsp Turmeric powder
  • Salt
  • 1/2 tsp Mustard (Rai)
  • 1 tsp Cumin seeds (Jeera)
  • 1 tbsp Oil

👨‍🍳 Instructions

  1. 1Clean the methi leaves firstly and chop it roughly, keep aside.
  2. 2After that, wash, peel potatoes, cube cut and boil it until soft but yet retains the shape without over cooking.
  3. 3Then, heat a kadai and add the tempering items in hot oil, followed by onion.
  4. 4Fry till onion turns soft and then add the methi leaves. Fry furthermore till it reduces in volume.
  5. 5Now add chilli & coriander powder (I used my sambar powder in place of these), turmeric, salt and cooked potato.
  6. 6Then, sprinkle water, mix well and cook covered in low flame.
  7. 7After that, roast till potato turns golden brown and nice aroma wafts.
  8. 8Transfer to serving dish and serve as an accompaniment for rice or for rotis!
