Tomato Cucumber Onion Salad

Ingredients

  • 1 lb cherry tomatoes (ripe)
  • 1 large cucumber
  • 1 small red onion
  • A handfull of fresh herbs (basil, dill and parsley)
  • 1/2 cup crumbled feta cheese
  • 3 tbsp olive oil
  • 1 tbsp red wine vinegar
  • 1 tbsp Dijon mustard
  • 1/2 tsp dry oregano
  • Salt and ground pepper (to taste)

Instructions

    Slice the cucumber into thin half-moons, thinly slice the red onion, and halve the cherry tomatoes. Add everything to a large serving bowl.
