A Spanish-Style Pork and Potato Bake with tender pork, golden potatoes, and colourful veg, all coated in a smoky, gently spiced seasoning.

📝 Ingredients

  • 750 g lean diced pork, (all visible fat removed)
  • 2 medium onions, (peeled and chopped into chunks)
  • 2 peppers (any colour), (deseeded and chopped into chunks)
  • 1 large courgette, (chopped into chunky slices)
  • 300 g new potatoes ((any larger ones cut in half))
  • 12 cherry tomatoes
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 2 tbsp paprika
  • 1/2 tsp chilli powder
  • 1/2 tsp fennel seeds
  • 2 garlic cloves, (peeled and sliced)
  • low-calorie cooking spray

👨‍🍳 Instructions

  1. 1Preheat the oven to 180ºC. Season the pork with salt and pepper.
  2. 2Spray a frying pan with low-calorie cooking spray and set on a medium heat. Brown the meat for 5 minutes, until it's a light golden brown colour on all sides.
  3. 3Add the pork and vegetables to an ovenproof dish. Spray with low-calorie cooking spray.
  4. 4Sprinkle over the salt and pepper, paprika, chilli powder, and fennel seeds, and mix well.
  5. 5Add the garlic and cook for 50 minutes. Stirring once, halfway through.
  6. 6Remove: Once the potatoes are golden and the meat is cooked through, remove from the oven and serve immediately.
