This simple high-protein Cottage Cheese Pizza is made with a simple homemade dough and topped with tomato, basil and two cheeses. A delicious fakeaway that's easy to customise with your favourite toppings.
📝 Ingredients
- 250 g fat-free cottage cheese
- 150 g self-raising flour
- 2 tbsp tomato purée
- 3 tbsp water
- 1 tsp white granulated sweetener
- 1 tsp mixed herbs
- 1/2 tsp garlic granules
- salt and pepper, (to taste)
- 2 cherry tomatoes, (sliced)
- a few basil leaves, (finely chopped)
- 25 g reduced fat mozzarella cheese, (roughly torn)
- 25 g reduced-fat Cheddar cheese, (finely grated)
👨🍳 Instructions
- 1Preheat the oven to 200ºC. Once hot, add two oven trays to the oven to heat up while preparing the pizzas.
- 2Add the cottage cheese to a food processor and blitz until smooth. Then pour into a mixing bowl, along with the flour. Mix into a rough dough.
- 3Dust the work surface with a little flour and tip out the dough. Bring together into a smooth ball. Leave to one side while you prep the sauce.
- 4Combine: In a small bowl, combine the tomato purée, water, sweetener, mixed herbs, garlic and a little salt and pepper.
- 5Divide the dough in half and shape into two circular pizza base shapes — about 20cm wide.
- 6Remove: Working quickly, remove one tray from the oven and add one of the pizza bases. Spread half of the sauce on the base, then add half the tomatoes and half the basil on top.
- 7Sprinkle over half of both cheeses and pop the tray into the oven for 15-20 minutes. Repeat with the second pizza base.
- 8Remove: The pizza base should be golden brown, and the cheese golden and bubbling. Remove from the oven, slice, and serve. One pizza is one portion.
