These salt cod fritters take a little extra effort, but they're so delicious it will definitely be worth it. You can get your fishmonger to skin and bone your cod if you're not comfortable doing it yourself.

📝 Ingredients

  • 250 g salt cod soaked until desalinated
  • 200 g potatoes cooked and mashed
  • 1 tbsp vinegar
  • 4 tbsp milk
  • 1 onion finely chopped
  • parsley chopped to make 2 tbsp
  • 3 eggs separated
  • for frying oil

👨‍🍳 Instructions

  1. 1Remove any skin and bone from the fish and flake it finely.
  2. 2Add the potato, vinegar, milk, onion, parsley and egg yolks. Season and mix well.
  3. 3Whisk the egg whites to soft peaks and fold into the mixture.
  4. 4Heat a saucepan one-third full of oil until a bit of bread sizzles and browns in a minute.
  5. 5Add the salt cod mixture in spoonfuls and fry until brown all over. Drain on kitchen paper.
