Homemade Chipotle Mayonnaise

Ingredients

  • 2 egg yolks
  • 1 egg
  • 1 tablespoon Dijon mustard
  • 3 tablespoons freshly squeezed lime juice
  • 1/4 teaspoon kosher or coarse sea salt
  • Freshly ground black pepper (to taste)
  • 1 1/2 cup vegetable oil
  • 1/2 cup olive oil
  • 2 tablespoons sauce from chipotles in adobo sauce

Instructions

    Place the egg yolks, egg, mustard, lime juice, salt, and pepper into the jar of a blender and process over low speed for a minute.

    Open the lid and slowly add the oils in a very fine stream until all incorporated.

    Scrape the mayonnaise into a bowl, stir in the sauce from the chipotles in adobo and set aside. You may refrigerate what you do not use for up to one week.
