Shallot Vinaigrette

Ingredients

- 1 tablespoon fresh lemon juice (from ~1/2 a lemon)
- 1 teaspoon Dijon mustard
- 1 medium shallot (minced)
- 1/3 cup extra-virgin olive oil
- 1/4 teaspoon kosher salt (plus more to taste)
- freshly ground black pepper (to taste)
Instructions
