Juicy and tender, Chicken Souvlaki brined + marinated. With pieces of sweet vegetables (onions, peppers), and flavors of lemon, and oregano!

📝 Ingredients

  • 670 grams (1.4 pounds) boneless skinless chicken breasts (left at room temperature for 30 minutes)
  • 1 green bell pepper (cut into 3 cm (1 1/4-inch) square pieces)
  • 1 sweet red pepper (cut into 3 cm (1 1/4-inch) square pieces)
  • 1 red onion (cut into 3 cm (1 1/4-inch) square pieces)
  • 70 grams (2.4 ounces) fine sea salt
  • 700 ml water
  • olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon onion powder
  • 1/2 teaspoon paprika
  • freshly ground pepper
  • 2 tablespoons fresh lemon juice
  • 6 tablespoons extra virgin olive oil
  • pita bread
  • 1/2 batch Tzatziki (see how to make it here)
  • lettuce, sliced tomatoes, cucumbers, and onions (or a Greek salad)
  • dried oregano (to sprinkle on top)
  • lemon

👨‍🍳 Instructions

  1. 1Make the brine. Add salt and water to a mixing bowl and stir until salt is fully dissolved.
  2. 2Brine the chicken. Submerge the chicken breasts in the brine. Leave the bowl with the chicken at room temperature for 30 minutes.
  3. 3Remove the chicken from the brine and drain. Pat dry with paper towels and cut into 4 cm (1½-inch) cubes.
  4. 4Add chicken, dried oregano, onion powder, paprika, freshly ground pepper, and a generous drizzle of olive oil to a mixing bowl and toss to combine.
  5. 5Marinate. Let chicken marinate at room temperature until the grill gets heated. Alternatively, cover the bowl and place it in the fridge for a couple of hours or overnight. Make sure to remove from the fridge 30-45 minutes before cooking.
  6. 6Heat a grill pan or griddle over medium-high heat or a gas grill over moderate heat. Brush lightly with oil.
  7. 7Thread the meat on the skewers alternately with a piece of vegetable (green, red pepper, and onion).
  8. 8Grill for about 5-6 minutes on each side. Turn the Souvlaki to grill on all sides until the internal temperature registers 166°F / 74°C on an instant-read thermometer. See Notes Below.
  9. 9Make the Ladolemono. Let the skewers rest on a plate while you prepare the Ladolemono. In a small bowl whisk to combine the lemon juice and extra virgin olive oil.
  10. 10Drizzle Ladolemono over the skewers and then sprinkle with some dried oregano.
  11. 11Serve with preferred sides and enjoy!
