These Greek Style Green Beans (fasolakia) are a tasty way to level up your side dish game! A mouthwatering, easy to make green bean recipe that screams Mediterranean cuisine. So hearty with the addition of tomatoes and potatoes, you can even enjoy it as a main meal!

Ingredients

  • 1 small Onion (diced)
  • 4 cloves Garlic (minced)
  • 3 tablespoons Extra Virgin Olive Oil
  • 1 tablespoon Tomato Paste
  • 1 1/2 pounds (750g) grated Tomatoes (or 28oz (800g) can crushed tomatoes)
  • 1/2 teaspoon Sugar ((to balance acidity))
  • 1 1/2 pounds (750g) fresh Green Beans (ends cut off)
  • 3-4 medium Potatoes, cut in half or quarters (or 8 baby potatoes halved)
  • 1/3 cup fresh Parsley (chopped)
  • 1 whole Cinnamon Stick
  • 1 cup hot Water
  • 3 tablespoons fresh Dill (chopped)
  • 1/2 cup Greek Feta Cheese for garnish (crumbled)
  • Salt and Pepper to taste

Instructions

    Sauté - cook Onions in olive oil over medium-high heat for 5 minutes. Add Garlic and sauté for 1 minute.

    Add Tomatoes - stir in Tomato Paste and cook for 1 minute, mixing with Onions. Add grated Tomatoes (or canned Diced Tomatoes) and stir until evenly combined. Season with Salt, Pepper, and add Sugar to balance acidity.

    Add Vegetables - mix in Green Beans, Potatoes, Parsley, Cinnamon Stick and hot Water.

    Simmer - bring to a boil. Cover with lid, reduce to simmer and cook for 30 minutes, stirring occasionally.

    Season and Adjust - stir in the chopped Dill, and cook uncovered for another 5 minutes. If sauce is too watery, simmer until it thickens. If too dry, add extra water. Sauce should be thick. Adjust seasoning if required.

    Serve and Garnish - with crumbled Feta Cheese and fresh Dill. Can be served warm or at room temperature. The perfect side dish for your Greek Lamb!
