  • 1/2 Cup Flour
  • 2 Tablespoons Chives (chopped)
  • 2 Tablespoons Basil (chopped )
  • 1/2 teaspoon Salt
  • Black Pepper
  • 1 1/2 Cups Mozzarella Cheese (shredded)
  • 1/4 Cup Parmesan Cheese (fresh, shredded)
  • 1/2 Cup Sour Cream
  • 1/4 Cup Feta Cheese
  • 1 teaspoon Parsley (fresh)
  • 1/2 teaspoon Lemon Zest (fresh)
  • 2 Tablespoons Lemon Juice
  • 1 Clove Garlic (small, minced)
  • Salt and Pepper (to taste)

Instructions

  1. 1

Shred the zucchini using a box grater or food processor and then place in a colander with salt and let stand for 10 minutes. While the zucchini is sitting, make the sauce (see section below).

  2. 2

Then, using a cheesecloth or a clean kitchen towel, squeeze out as much liquid from the shredded zucchini.

  3. 3

In a mixing bowl, combine the shredded zucchini, egg, flour, chopped chives, basil, salt, a dash of pepper and the cheeses.

  4. 4

Mix everything together until well combined.

  5. 5

Divide the mixture into 8 equal portions and shape each portion into 3" patties.

  6. 6

Place the patties in the freezer for 5-10 minutes to help them hold their shape better.

  7. 7

Preheat your air fryer to 350 degrees F. Place the zucchini patties in the air fryer in a single layer, working in batches if necessary.

  8. 8

Air fry for 7 minutes, flip and do an additional 7-10 minutes or until they are golden brown and crispy on the outside.

  9. 9

    Serve with dipping sauce.
