- 8 ounces spicy Italian sausage (casings removed)
- 3 1/2 cups low-sodium chicken broth (divided)
- 1 1/4 cups orecchiette pasta
- 1/2 cup arugula (roughly chopped)
- 1/4 cup Parmigiano-Reggiano cheese (finely grated)

- 1In a large, deep skillet, heat the olive oil over medium heat. Add the diced onion and a pinch of salt, then sauté for about 5 minutes, until the onion softens and becomes translucent.
- 2Add the sausage to the pan, breaking it apart with a spoon. Cook for 5–7 minutes, stirring occasionally, until the sausage is browned and fully cooked through.
- 3Pour in 1 ½ cups of chicken broth, using a wooden spoon to scrape up any flavorful browned bits from the bottom of the pan. Bring the mixture to a boil.
- 4Stir in the orecchiette pasta, ensuring it's evenly coated in the broth. As the liquid is absorbed, gradually add the remaining chicken broth, continuing to cook and stir for about 15 minutes, or until the pasta is tender and the broth is mostly absorbed.
- 5Add the chopped arugula and stir it into the pasta. Cook for another 1–2 minutes, just until the arugula wilts.
- 6Remove the skillet from the heat. Plate the pasta, topping it with a generous sprinkle of grated Parmigiano-Reggiano cheese.
