- 3 cups leftover rice
- 2 large eggs
- 1 cup frozen peas and carrots ((or frozen mixed vegetables))
- 3 tablespoons oil
- 1 tablespoon butter ((optional))
- 2 stalks green onions ((whites for fried rice, greens for garnish))
- 2-3 boneless chicken thighs ((or 1 chicken breast))
- 2 teaspoons soy sauce
- 1 teaspoon water
- 1/2 teaspoon ginger ((grated))
- 1 teaspoon sesame oil
- 1/2 teaspoon cornstarch
- 1 tablespoon oil
- 3 tablespoons soy sauce ((low sodium))
- 1 1/2 tablespoon oyster sauce
- 1/4 teaspoon salt
👨🍳 Instructions
- 1--- Preparation ---
- 2Finely mince 2 stalks green onions and separate the greens from the whites. We will add the whites into the fried rice, and use the green for the garnish. Set it aside for later.
- 3Grate ½ teaspoon ginger and set it aside for later for the chicken marinade.
- 4Next, oil your hand and break up 3 cups leftover rice into small pieces. Aim to get them into individual pieces if possible.
- 5In a small bowl, beat 2 large eggs with 1 teaspoon of oil and set aside.
- 6In another small bowl, combine 3 tablespoons soy sauce, 1½ tablespoon oyster sauce, and ¼ teaspoon salt. Set aside for later.
- 7--- Marinate Chicken ---
- 8Start by dicing 2-3 boneless chicken thighs (or 1 chicken breast) into 1/8 inch cubes, and place it in a bowl.
- 9Add 2 teaspoons soy sauce, 1 teaspoon water, ½ teaspoon ginger, ½ teaspoon cornstarch, and 1 teaspoon sesame oil into the bowl and mix everything well.
- 10Once everything is mixed well, add 1 tablespoon oil to the chicken and mix again. Let it marinate for 15-30 mins.
- 11--- Stir-fry the Chicken Fried Rice ---
- 12Set a large skillet or wok over the stove, and set it to medium-high heat and let it heat up. Once the pan is hot, add 3 tablespoons oil, and 1 tablespoon butter (optional).
- 13Add in the chicken and cook until it's cooked all the way through. Approx. 3-4 minutes.
- 14Add in 1 cup of frozen vegetables and the whites of the green onion. Cook for about 2 minutes until the vegetables soften.
- 15Push aside the vegetables and chicken, add a bit more oil to the pan, and add in the beaten egg. Let it cook for about 30 seconds until it is about 80% cooked.
- 16Add the rice on top of the half-cooked eggs. Mix just the rice and the egg together and cook it together until the egg is fully cooked and the rice and eggs look dry (not mushy). This should take about 2-3 minutes. If there are still small chunks of rice, use the back of your spatula to break it up.
- 17Push the chicken and vegetables back together, add the sauce and the greens of the green onion, and mix everything together.
