Instant Pot Chicken Bone Broth Recipe

An Instant Pot makes it SO easy to make nutritious, collagen-rich bone broth in a fraction of the time!

Ingredients

  • 1 roast chicken carcass, meat mostly removed (or 2-2 1/2 pounds chicken bones and feet)
  • 2 large carrots, cut into thirds
  • 2 stalks of celery, cut into thirds
  • 1 medium onion, cut into quarters
  • 2-3 bay leaves
  • 1 Tablespoon black peppercorns
  • A few sprigs of hearty fresh herbs (rosemary, thyme) or 1-2 teaspoons dried
  • 2 Tablespoons apple cider vinegar

Instructions

    Put the chicken carcass into the insert pot...: Put the chicken carcass into the insert pot of your Instant Pot or electric pressure cooker. Add the rest of the ingredients.

    Fill the pot to the fill line with...: Fill the pot to the fill line with water.

    Close the Instant Pot, set the steam valve...: Close the Instant Pot, set the steam valve to "Sealing" and cook on high pressure for 2 hours.

    When it finishes the pressure cycle, you can...: When it finishes the pressure cycle, you can either wait 10 minutes and then manually release the steam, moving the steam valve to "Venting" or you can allow it to release on its own and remove it at your convienience. (See note.)

    Grab a large fine mesh strainer, two large...: Grab a large fine mesh strainer, two large bowls, and a ladle. Place the strainer over one of the bowls. Ladle out the large pieces of bone and the bigger vegetables and put them into the strainer. Press to release any broth, then transfer the solids to the other bowl to throw away later. Repeat until most of the large solids are gone from the pot. At this point you can pour the rest of the broth through the strainer without large pieces falling out and splashing you.

    Transfer the broth to other containers for storage....: Transfer the broth to other containers for storage. I like to use freezer-safe plastic food containers or quart-sized mason jars. If you use mason jars, leave an inch of space at the top to allow for expansion. (See note.)

    Allow the broth to come to room temperature...: Allow the broth to come to room temperature before placing the containers in the fridge or freezer.
