📝 Ingredients

  • 2 pounds new potatoes (halved)
  • 2 tsp salt
  • 1/2 cup crumbled feta cheese
  • 1-2 garlic cloves (minced)
  • 1 Tbsp chopped parsley
  • 1 lemon (zest and juice)
  • 2 tbsp olive oil

👨‍🍳 Instructions

  1. 1Put the potatoes in a large saucepan and add cold water to cover by about an inch.
  2. 2Bring to a boil over medium-high heat then add 2 teaspoons salt, lower the heat, and let simmer until potatoes are tender, about 5 to 8 minutes depending on their size.
