My favorite pie in all of the universe. Think lemon meringue, but with pineapple instead!

- 3/4 cup sugar
- 1/4 cup butter (4 T.)
- 2 egg yolks (save whites for meringue)
- 1/3 cup cornstarch or potato starch
- 1/2 teaspoon vanilla
- 1 8-ounce can of crushed pineapple
- 1/2 cup + 2 Tablespoons water
- 1 pre-baked pie crust shell
- 2 egg whites
- 1/8 teaspoon salt
- 1/4 teaspoon cream of tartar
- 1/4 cup sugar
- 1 teaspoon vanilla
