Sinangag, or Filipino Garlic Rice is the perfect way to use leftover rice, and I'm going to show you the ingredients and techniques to make this classic dish better. With fluffy grains of rice infused with garlicky oil, it's accented by loads of caramelized garlic.
📝 Ingredients
- 300 grams cooked long grain rice ((about 2 cups))
- 2 tablespoons olive oil
- 20 grams garlic ((3 large cloves, minced))
- 1/4 teaspoon salt
- 1/4 teaspoon white pepper
👨🍳 Instructions
- 1Crumble rice.: Use your hands to break up any clumps in the 300 grams cooked long grain rice.
- 2Fry garlic.: In a large frying pan, add the 2 tablespoons olive oil and 20 grams garlic and heat over medium-high heat, stirring regularly to ensure even browning. Fry the garlic until most of the sizzling subsides and the garlic is a golden brown color.
- 3Remove some garlic.: Remove half of the garlic from the pan, leaving the oil behind.
- 4Add rice.: Add the rice and toss to coat evenly with the oil and garlic.
- 5Stir fry.: Stir-fry the rice until it's heated through. Season with 1/4 teaspoon salt and 1/4 teaspoon white pepper to taste.
- 6Serve.: Serve the Sinangag hot and garnish with the reserved garlic. You can also top with some scallions for color.
