  • 1 tablespoon brown sugar
  • 1 pound boneless skinless chicken thighs or chicken breast
  • vegetable oil (for frying)
  • 2 large eggs
  • 1 tablespoon whole milk
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 2 cups Panko breadcrumbs
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1 Japanese milk bread loaf (about 10 slices)

  1. 1--- MAKING THE SLAW: ---
  2. 2Thinly slice green cabbage and chop green onions.
  3. 3In a large bowl, combine the cabbage and green onions.
  4. 4Add kewpie mayo, a squeeze of lemon juice, and a sprinkle of salt.
  5. 5Toss everything together until well combined. Set aside in the fridge.
  6. 6--- TONKATSU SAUCE: ---
  7. 7In a small bowl, mix together ketchup, Worcestershire sauce, oyster sauce, and brown sugar.
  8. 8Stir until the sauce is smooth and the sugar has dissolved. Set aside.
  9. 9--- FRYING THE CHICKEN KATSU ---
  10. 10Prepare the chicken: If using chicken thighs, trim any excess fat. If using chicken breasts, cover with Saran wrap and pound out the chicken to about the thinness of a thigh. Pat the chicken dry with paper towels.
  11. 11Wet Batter: In a shallow bowl, whisk together eggs, whole milk, salt, and black pepper.
  12. 12Dry Coating: In another shallow bowl, combine all-purpose flour, salt, black pepper, and garlic powder.
