  • 6 pounds beef bones (marrow bones, knuckles, or oxtails)
  • 5 celery stalks (roughly chopped)
  • 5 carrots (roughly chopped)
  • 2 large onions (quartered)
  • 12 garlic cloves (smashed)
  • 5 thyme sprigs
  • 4 bay leaves
  • 1 1/2 tablespoons apple cider vinegar
  • salt (to taste)
  • white pepper (to taste)
  • cayenne powder (to taste)
  • 10 to 12 cups water (enough to cover the bones)
  • 1/2 teaspoon turmeric (or to taste)
  • 2 cinnamon sticks
  • 1 tablespoon black peppercorns

  1. 1Pre-Boil the Bones (Optional but Recommended): Place the beef bones in a large pot and cover them with water. Bring the water to a boil over high heat, and let the bones boil for 10-15 minutes. Drain and rinse the bones under cold water to remove impurities.
